Cacao Energy Bars

I  was originally planning on making my Raw Nut Granola recipe (will post it soon), but I decided to play around with some ingredients and try something new!

I am so glad I did, because I came up with these amazing, energy-packed bars. This recipe makes about 12 small bars or 6 large ones. I opted to cut them into 12 so I could share them with my family and see how they liked them (spoiler alert: they all LOVED them).

Cacao Energy Bars are packed with dates, oats, almonds and seeds and are great for a quick breakfast or for an energizing afternoon snack!

  • 1 cup tightly packed dates (don’t forget to remove pits)
  • 1/2 cup gluten-free oats
  • 1/2 cup almonds
  • 1/2 cup raisins
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup raw cacao nibs
  • 1 tablespoon chia seeds
  • Sprinkle of Salt (I used Pink Himalayan Salt)
  • Ground Cinnamon to taste
Ingredients… Trader Joe’s is my favorite places to stock up on pantry supplies!


Add ingredients to food processor and blend together on a low setting until the mixture starts to clump up naturally. Place parchment paper on an 8 x 11 pan and flatten out mixture into a large rectangle. Slice into 6 to 12 bars, depending on what size you want your bars to be. Store in an airtight container in the fridge for up to one week.

Tip: I lined my containers with parchment paper and used more in between to stack and store the bars… They can be a little sticky because of the dates!

Store bars in airtight container for up to one week (if you can make them last that long)!
