Raw Vegan Tacos

This is probably one of my favorite recipes so far. I hope you guys try this out and enjoy it as much as my family and I do! This recipe creates 1-2 servings.

Ingredients for the Taco “Shell”

  • Large butter lettuce leaves (If you want to keep the meal fully raw use the butter lettuce as tortillas, but you can use corn tortillas if you would prefer)

Ingredients for Taco Filling:

  • 1 cup Walnuts
  • 1/4 Red Bell Pepper, chopped
  • 1/8 teaspoon Cumin
  • 1/8 teaspoon Chili Powder
  • Quick dash of Onion powder
  • Salt and Pepper to taste

Directions for Taco Filling:

Place ingredients in food processor and pulse until the ingredients are chopped into small, slightly chunky pieces.

Prepared Taco Topping

Ingredients for the Taco Topping:

  • 1 Roma Tomato, seeded and diced
  • 1/2 Cucumber, diced
  • 1/2 Avocado, diced
  • 1 teaspoon Cilantro, chopped (fresh or freeze-dried)
  • Juice of 1/2 a Lime (you can use more if you would like)
  • 1 minced Garlic Clove
  • 1 teaspoon Olive Oil
  • 1/8 teaspoon Cumin
  • Salt and Pepper to taste

Directions for Taco Topping:

Add lime juice, olive oil, freshly minced garlic, cumin and salt & pepper to a small bowl or small mason jar and mix dressing together. I like to use a small mason jar because it is easy to just shake the ingredients to mix them.  In a separate small bowl, add diced tomato, cucumber and avocado.  Add the cilantro and the lime juice dressing that was just prepared to the bowl of tomato, cucumber and avocado and then gently mix it all together.

Now it’s time to put it all together!!! Place a couple heaping spoonfuls of the taco filling on the butter lettuce leaves and distribute as evenly as possible. Top each one with desired amount of the Taco Topping and then ENJOY!!!

TIP: This GUACAMOLE is a great addition to top off your Raw Vegan Tacos!
