Maca is an excellent source of Vitamin C, Copper and Iron and it has been shown to increase energy and improve mood in numerous studies.
Coconut Maca Bars are a fantastic and delicious option for a quick snack or breakfast on-the-go.
- 1 rounded tablespoon Maca Powder
- 1 tablespoon Cacao Powder
- 1 cup Cashews
- 1/2 cup Coconut Shreds
- 1 teaspoon Vanilla Extract
- 6 large Medjool Dates, pitted
- 1 and 1/2 tablespoons Coconut Oil, melted
- Water as needed
Melt coconut oil (heat over stove, leave in direct sunlight for a couple minutes or microwave). While coconut oil is melting, add all ingredients to a food processor. Add melted coconut oil and blend well. If the mixture is not sticky, add 1 teaspoon of water and blend again. Add more water if needed!
Once desired stickiness is reached, place the mixture on a sheet of wax paper on an 8×11 cookie sheet and use hands or roller to flatten it out until it is about a quarter inch thick (I used another sheet of wax paper on top of the mixture because it is SO sticky and hard to roll out without it!). When finished, cut into 12 small bars and store in an airtight container for up to 5 days in the refrigerator.
